Mendicino's Italian Specialties is the vision of Gasper Mendicino and Sal Amendola. Both men are first generation Italian Americans. Growing up the children of Italian immigrants they took part in many Old World Italian traditions. Making Soppressata is one of them. The annual process began when their families would plant, harvest and can the peppers used when making Soppressata. These peppers were a key ingredient in achieving the perfect seasoning needed to produce the best-tasting Soppressata. Each year families would gather their sharpest knives, meat grinders, finest twine and, of course, their homemade peppers. The finest cuts of meat would be carefully prepared, seasoned and portioned into casings. The Soppressata would then be hung and cured for 3-4 months.
Gasper and Sal have been making this cured Italian meat for decades with their families. In sharing their passion to keep the Italian traditions they both love alive these two friends are proud to bring you Due Amici Artigianale Soppressata for your enjoyment.
